Name: Radish Eyeballs Martini
Yield: Serves 1
Ingredients:
- 1 radish
- 1 pimento stuffed green olive
Garnish: Garnished with heirloom tomato and pigmy basil
Glass Guide: Martini Glass
Special Equipment: paring knife
Preparation:
- Peel the radish, leaving thin streaks of red skin for veins/blood vessels.
- With the pointed tip of a vegetable peeler or with a small paring knife, scrape out an olive-sized hole in each radish.
- Stuff an olive into each hole, pimento-stuffing-side out.
- Pop each olive-stuffed radish into an ice cube tray (you may have to trim some of your radishes), and cover with water.
- Freeze solid.
- Alternately, just pop cold, prepared "eyeballs" into your favorite martini recipe-- no freezing needed.

Notes:
- Adding "eyeballs" to any martini recipe makes perfect Halloween drinks for a cocktail party-- or any ol' Halloween party. All you have to do is make the eyeballs! Assemble a whole pile of eyeballs ahead of time and stick them in the freezer until you're ready for them. Then putting together your spooky Halloween drinks will be a cinch.
